Another silly question - sorry they just come out naturally eh eh.
I couldn0t find anywhere a complete list of canon GH material.
I have found several articles in Dragon, plus of course OJ, LGJ, Dungeon mag., modules etc.
Is there a complete list of all canon GH material? I couldn't find it anywhere.
I guess a short list of apocrypha (OJ mostly) or theoretically-official-but-not-really (see Estes books, Castle Greyhawk module) publications could be useful.
Or maybe I am just blind.

I don't think anyone's bothered to make a complete list of every Greyhawk article ever published in Dragon, Dungeon, and Polyhedron magazines, but the article on Greyhawk in the wiki has a good list of all the novels and comic books, as well as other major works.
Roger E. Moore wrote an index of Greyhawk works (including Dragon, Dungeon, and Polyhedron articles) in the mid-1990s, but I don't think anyone's updated it since.

Probably the most complete list of sources (although some will quibble with a few listed being canon) for GH is the list at the beginning of Jason Zavoda's Encyclopedia Greyhawkia, hosted at http://melkot.com/mechanics.html . He only goes up to Dragon # 294 and Dungeon # 77 in it, so there is some additional material in later issues of those magazines, but it's still pretty good in my book.
EDIT: Looks like the version linked to is newer and has more issues of Dragon and Dungeon listed than the one I had archived in my hard drive, so Yayyyy!

For Dragon Magazine, there's the DragonDex.

It's a complete index of every Dragon Magazine article, from Strategic Review #1 to Dragon #359. Every article involving Greyhawk is tagged as such, and also indexed under a general Greyhawk heading.
