Hi. First, I think, that you mean CY585 as that the set is after Greyhawk Wars. It depends on what you want. The big questions ares what rules system are you be using? How complicated to you want to make it? Each makes a big difference in how to design new tables.
I have been working on converting the WOG boxed set to 3.5 rules. I set my paradigm as making making the tables as compliant with 3E rules as possible. This meant, to me, that I keep the boxed set encounter tables intact, but to change the "Use Standard Encounter Tables" from 1ed over to 3rd ed. I took the 1st ed tables, redefined each table to 3E climate and terrain, match monsters between books to see if they are appropriate to the climate, redefine encounter numbers and so on. I am also using the additional weather and climate information from Frostburn and Sandstorm books. I am about 10% done converting after about 40 hours of work on it (data entry sucks!) even when automatic part of it thru Microsoft Access.
