In DMG AD&D1, EGG had an appendix in the back on gambling, but no way to differentiate between player skills. So what about games where skill has a role (poker, blackjack, bridge/whist, chess, backgammon etc.)?
Does that fall under "Profession (Poker Player)", or what?
When I've done it with NPCs vs. NPCs, I just roll wins and losses randomnly, then add/subtract 5% based on ability modifiers and skill. In some cases, "Sense Motive" and "Bluff" might come into play, as well as various forms of cheating ("Pick Pockets" mostly). A long time ago, I gave the "better" character a chance to "do-over", but that was over 20 years ago, at the beginning of proficencies, long before the present skills sytem.
I thought they would cover this in Complete Scoundrel, but they didn't.
This is a little late, but I have an answer for you.
WotC has one-off product called "Three Dragon Ante". It is an independent card game. It was marketed both in the game's rule book as well as some of the 3.5 books and Dungeon and Dragon magazines as the number one gambling game in any D&D setting.
In the back of the game's rule book is what you are looking for. If you play "Three Dragon Ante" as your PC character, many of your skills that have at least 5 ranks can affect the game play. Bluff, Sense Motive, Slieght of Hand, and several other skills all affected the game some how. Extra draw or extra coin, stuff like that. I guess you could requiure a skill check to use the ability if you wanted too, but i do not remember it calling for that.
You could try to adapt the skill abilites to another gambling game. The system you mentioned above would be a much faster way to resolve a round of gambling, with modifiers of course.
