Yes. There is now a "canon" creation story. It is embodied in the worship of the god Zarus and a surrounding group of myths that are set out in Races of Destiny, a fairly recent Wotc product. By my reading, YMMD, it is canon. Zarus was Oerth's "Adam" and the first "human" god.
Search the GREYtalk Archives. There are a few well written and thorough creation myths posted there. I found a couple of favorites regarding the elves and giants; Pelor, Beory and Nerull; and one featuring Pelor and Tharizun as creators.

I made a little creation myth for each of the races I submitted an article on. Such as the Dwarves of Oerth, The Gnomes Of Oerth, The Elves of Oerth, and The Trolls Of Oerth.
While you will see similarities in parts of the creation myths you can also notice the difference each one displays as well.
